I was up bright and early for a Without Limits running practice at the track this morning, followed by an upper body lift, and some foam rolling and stretching at the gym. I had a great run this morning and it was nice to get it in before the heat shows it's ugly side this afternoon. I drank a protein shake right after my run, on my way to the gym. Preparation, my friends, is they key to success when it comes to eating well. This is still a struggle for me as I am just NOT a huge fan of cooking. However, I can definitely pack a shaker cup and a scoop of protein to go. Easy, peasy!
Post workout, I whipped up two pieces of whole wheat bread with a slice of cheddar cheese and one egg. After all that working out, I was quite hungry, hence- no photo. Lunch was served up right in my very own office from the Porters Neck Grille room- a cobb salad (without bacon) with balsamic vinaigrette. Yum!
Make your own Basic Cobb Salad! This is a great go-to salad because it is well-rounded with fruit, veggies, protein and fat!
Ingredients
Romaine lettuce
Cherry tomatoes
Corn
1/2 Avocado- sliced
1-2 hard boiled eggs, chopped
Feta cheese
2 tbsp dressing of choice
Optional Ingredients
Grilled chicken
Salmon
Bacon
Croutons
Super easy and perfect for hot days because everything should be served nice and cold.
Thursday is currently my only day without teaching classes so most of it will be spent in my office tackling the to-do list that seems to get ignored the rest of the week when I'm running to a from classes like a crazy lady. I like having the break so I'm definitely not complaining. We have a staff meeting at one and then I get to walk around the entire building looking for marks or scratches for our painters to touch up tomorrow. Sounds thrilling, right?
