Greetings from freezing Omaha!
Please tell me you are somewhere warmer than me! I actually am enjoying it. It was 72 degrees and humid when I left Wilmington this morning, no thanks! I like to enjoy all the seasons of the year so anything above 50 in December definitely doesn't feel much like Christmas time to me! What is winter without at least a few snow flurries? Looks like I'll be getting my wish tomorrow!
After my brief day at work Saturday morning, I spent the remainder of the weekend with Zachary! We planned a pretty full schedule including some Christmas shopping and a Flaming Amy's date on Saturday evening. On Sunday, we went to the "Christmas Eve" service at my church in the morning and then took a trip to Whole Foods for a pre-workout protein-packed date!
Tofu scramble, vegan sausage, mock barbecue chicken and a little tofu
After lunch we headed to the gym to do an hour of cardio and a back workout. I got in a few miles mixed between running and walking, which felt great. After the gym, it was time to take Grady and Muffin to the Pet Sitter's house for the rest of the week. I hate saying bye to them! Grady is a huge crybaby which makes things a lot harder.
After that we went to Mellow Mushroom for pizza. I forgot to snap a photo but I had mine prepared with olive oil instead of red sauce, vegan mozzarella, pesto tofu and mushrooms. It was super yummy! Mellow Mushroom always hits the spot!
Today
This morning my first flight went out at 8:30am so after a quick trip to Starbs, I was off to the airport before 7am. Both flights went easy breezy, which always leaves me feeling shocked when I walk out of the airport without any problems. If you're a frequent flyer, you know how often there are delays and cancellations due to weather conditions, etc.
As I was waiting to get my luggage, this guy taps me on the back, asking if I had brought a lot of stuff. Much to my surprise, it was my Uncle John who lives in Huntington Beach, California. I haven't seen him in about two years so it has been nice to spend time with him. Since it is my Grandma's birthday on Christmas, he thought it'd be good to take a trip out to celebrate with her, so we get to enjoy his company until he flies home on the 26th.
Dinner tonight was featured around vegan hot dogs for me and my mom, and bratwursts for everyone else! Plus some roasted veggies, pineapple and cucumbers.
Red, yellow and orange peppers, onions, radishes and carrots broiled in olive oil with sea salt and pepper
We hope your week is off to a great start!
Oh, and Merry Christmas Eve, Eve!
