I hope your Tuesday is off to a great start! My morning was spent with the cute pups of Paws Place helping to prepare warm beds, folding laundry, cleaning water buckets and walking dogs. Meet Ms. Carolina- chow. She is super fluffy, docile and sweet, and absolutely adorable. I love her. If I didn't have pups of my own already, I would definitely take this girl home. There's something about a big fluffy dog that entices me, probably because they are great for cuddling!
Lunch
Recipes have been far and few between as of late, due to a pretty busy schedule and traveling. When you live alone, grocery shopping can be challenging when it comes to making sure things to go to waste. When I know I'm only going to be in town for a week or so, I don't cook a lot, and try not to stock my fridge up too full.
I am leaving to go visit my family again on Monday so I need to use up all of the produce I have in my fridge this week. Today, I whipped up one of my personal favorites, vegan broccoli salad. This is super easy and you can literally add in whatever ingredients you want. I always use broccoli as the base, add in some type of nut and some type of dried fruit. Today, I threw in a bag of broccoli, a bag of shredded carrots, chopped up prunes and a handful of pecans.
Then, we make the mayo! You can use a pre made vegan mayo (or non vegan if you prefer), but I like to make my own because it just tastes so much better!
Vegan Mayonnaise
1 cup safflower oil
1/2 cup unflavored soy milk
1 tsp lemon juice
Pinch of salt
1/2 a tsp of mustard
Mix together in a blender and store separately from the salad in a covered container in the fridge. It will keep for 3-4 days.
Unless you are planning to eat all of this in one day, I would store the salad separate from the mayo, both covered in the refrigerator and then just dish out portions throughout the week. You don't want to add in the vegan mayo until you are ready to eat it because it will cause everything to get soft as it sits in the fridge.
Lunch was a small bowl of this paired with a Vegan Malibu Burger. Yum!
