Happy Halloween! Unfortunately for me, I am having trouble sleeping this week.
Fortunately for my coworkers, that means they got some Halloween treats!
I woke up around 1am this morning and after laying in bed for two solid hours wide awake, decided I should get up and make some festive Halloween muffins to bring to work with me. I also decided to make an attempt at vegan oreo balls which didn't exactly hold a ball shape. I have thus deemed them, Vegan Oreo Creme Bites!
Vegan Oreo Creme Bites
Ingredients
- 18 oreos
- 1 tub of Daiya vegan cream cheese
- 4oz dark chocolate
- 2 tbsp coconut oil
Directions
1. Place oreos in a large bowl and completely crush into a fine powder.
2. Add in cream cheese and stir until mixed.
3. Break the dark chocolate into small pieces, add 1 tbsp of coconut oil and microwave for 30 seconds.
4. Stir chocolate and continue to microwave in 30 second increments, stirring in between until melted.
5. Add in another tablespoon of coconut oil to thicken for dipping.
6. Place foil or parchment paper on a baking sheet. Scoop spoonfuls of the oreo mix and completely submerge in melted chocolate until covered, and drop onto sheet.
7. Freeze for 20 minutes. Enjoy fresh out of freezer.
Cran Sweet Potato Muffins
Ingredients
- 1 can sweet potato puree
- 3/4 C coconut milk
- 2/3 C brown sugar
- 1/3 C water
- 1/4 C oil
- 2 Tbsp maple syrup
- 1 Tbsp lemon juice
- 2 C flour
- 2 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp ground cinnamon
- 1/4 tsp ground ginger
- 1/8 tsp ground nutmeg
- 1 C Craisins
Directions
- Preheat oven to 400 degrees. Lightly oil muffin tin or line with paper.
- In a large bowl, mix together sweet potato puree, coconut milk, brown sugar, water, oil, maple syrup and lemon juice.
- In a medium bowl, sift together flour, baking powder, soda, salt and spices.
- Combine wet and dry mixtures until just moistened.
- Spoon batter evenly into prepared pan.
- Bake for 25-28 minutes, or until a toothpick inserted into the center of a muffin comes out clean. I baked mine for 22 minutes because I like them super moist!
- Let muffins rest a moment in the pan, then transfer to a cooling rack. Enjoy!
