Savory Coconut Protein Popcorn

Now back to your regularly scheduled blogging...

I arrived home last night at what felt like a very late 10pm. Kentucky was such a good time and I'm so glad I went. We already miss Zach a lot and are counting down the days until he visits in late October.

On my home yesterday I stopped in Huntington, WV for a workout and lunch with some of my friends from Marshall. I sure do miss them. It was really nice to catch up and break up my trip a little bit. 



This morning breakfast was grab and go since I emptied my fridge out before my trip. I definitely have plans to hit up the grocery store sometime soon! However, when I got home last night I was starving! With it being so late, I didn't want to eat an entire meal so I made myself a bowl of popcorn. I have a very good feeling this is going to be my newest addiction.

Savory Coconut Protein Popcorn

Ingredients
  • Popcorn kernels (pop in a brown paper bag or using a popper)
  • Extra Virgin Coconut Oil
  •  Spectrum Savory Blend Hemp and Flaxseed (You can find this at Whole Foods)

Here's how I did it:
1. Place desired amount of coconut oil along with popcorn kernels into brown paper bag. I did about 1     1/2 tablespoons of coconut oil to get that coconut flavor.
2. Microwave for about 3 mins or until the popping slows.
3. Sprinkle 3 tbsp on Savory Blend all over popcorn bowl and toss around to mix.

This made enough for me to eat last night and also bring to work today!


The coconut flavor mixed with the Savory blend is so amazing. The best thing about thing about this snack is the heart healthy fats of the coconut oil, along with all the nutrients in the spice mix. The mix contains garlic, salt rosemary and parsley and these are the flavors you will taste. It also contains flaxseed, hemp seed and hemp protein powder and boasts 6g of protein and 3g of fiber per 3 teaspoons. 


For the remainder of the day I am playing major catch up on all of my office work, and then running errands, grocery shopping, going to the gym and going to yoga. It's gonna be a long one!
