Homemade Yummus

Check me out on the golf course on Monday! I had so much fun with Kendrick and Mandy. We drove around in the golf carts and laughed about how "good" we are at golf. We all got progressively better. I can definitely drive the ball and get a decent amount of length on my shot but hitting it straight is another story. 



Employee appreciation day was really fun and I wanted to send out a special thanks to the members who hung out with us, serving food and making sure we all felt very much appreciated. I APPRECIATE YOU GUYS! :) Thanks so much!

Yesterday I whipped up the absolute best batch of hummus I have ever had! I'm gonna put Zoe's out of business with this stuff! You can make the same thing in your blender at home. Here's what you need:

Ingredients

  • 16oz (1 can) of grabanzo beans
  • 4 tablespoons of lemon juice
  • 2 tablespoons tahini
  • 1 clove of garlic (I used crushed garlic from a jar- about 1/3 tablespoon)
  • 1 teaspoon salt
  • 2 tablespoons olive oil
  • Pepper and a few kalamata olives (optional)


Directions
  1. Drain the garbanzo beans.
  2. Place everything in the blender except the olive oil and blend until smooth.
  3. Pour olive oil over the top just before serving.
  4. I added a few chickpeas, some kalamata olives and pepper for garnish.




Hummus is YUMMUS! Around 4:00 I got a call from Petco saying that the Fitness Pups were ready to be picked up. I had been waiting all day to go for a nice walk outside because the weather was so beautiful. I figured it'd be good for the pups to get out after being at the groomer all day so we headed over to Hughe McCrae park for a nice little stroll. 



Now that they are almost naked you can tell how fit they actually are! :) 



Agenda for today...includes teaching the last two Aqua Fitness classes until Summer followed by office work and tying things up for my vacation. After work I am planning on a quick workout followed by some bike riding and a yoga class. Then packing and completing the rest of my food prep for the trip!
