Trail Mix Cookies

Good morning Friday! I hope all my fitties are doing awesome and have had a very productive week. As part of my second half of the year New Years Resolutions, I finally got a chance to get back to some yoga classes this week and I'm loving it. Last night I attended Relax and Restoration class, or as I refer to it, "Pillow Class" where we use props and bolsters to hold supported poses up to 5 minutes each. Regularly attending meditation classes is important for me personally because it helps me to manage stress/anxiety. I highly recommend them for absolutely anyone because they have truly changed my life.





I attend Wilmington Yoga Center and purchased their month unlimited deal so that I can go up to once per day if I so choose. My plan is to do at least 3 classes a week, though I will likely get to 5-6. Today I am going to a Hot Detox and Hold class so I'll let you guys in on what that's all about later! After class last night, I also made some super healthy, very delicious Trail Mix Cookies!



Trail Mix Cookies
(Vegan Substitutions Available)

Ingredients
  • 2 Cups Oatmeal
  • 2 Ripe Bananas
  • 1/2 Cup Vanilla Whey Protein Powder
  • 1/4 Cup Chia Seeds
  • 1/2 Cup Chocolate Chips
  • 1/2 Cup Pecans
Directions
  1. Preheat oven to 350.
  2. Mash banana and oats together, mix well.
  3. Add in the rest of the ingredients and mix.
  4. Spoon golf ball sized balls onto a greased baking sheet.
  5. Bake 14-16 minutes.

I checked on mine at about 11 minutes and they were still in balls that hadn't cooked all the way in the middle, so I flattened them out a little with a spatula and cooked them for 3 more minutes and they turned out perfectly!



These can be made vegan very easily by substituting the whey protein for vegan protein and using vegan chocolate chips. You also could throw in some dried fruit or any type of nut you choose!  Good snack for post-workout or a healthier dessert choice.
