Chunky Tomato Guacamole

I have these great tomatoes from The Brinks' Garden that I have been eating like apples they are so good. So tonight after work I ran to the grocery store to get some ingredients to make some sort of salsa/pico/guacamole, whatever you want to call it!



Ingredients:
  • 1/2 lime juiced
  • 2 tomatoes
  • a small handful of cilantro
  • a clove of garlic
  • 2 avocados


Chop everything up and cut the lime in half.


Mix everything together in a bowl and then squeeze the juice of the lime into the mixture. (Check Grady out waiting for me to drop something).


Salt and Pepper to taste!

Super easy and only takes about 5 minutes to prepare. The great thing about this recipe is you can change it up however you like it. I think it would have also been really good with some onion.

Enjoy with tortilla chips, whole wheat cheese quesadillas or like I did, with a bean and rice burrito. Yum!
