When I got home from work yesterday I was extremely tired and not wanting to go to the gym at all! So, I told myself I was going to take an afternoon nap and then go do some cardio later in the evening. Well, as I got closer to my apartment, taking a nap out by the pool sounded muchhhh better than taking a nap in my bed. I knew if I went to the pool without working out first, there was no way I would be working out.
So, I got my butt dressed for a run and went outside. After the first 1/2 mile I was feeling so much better. It's amazing how exercise can do that for us. I did about 2.5 miles which is good for me in the heat.

I spent the rest of the afternoon at the pool workin' on my tan and finishing a book I've been working on for a few months. I only ever have time to read about 10 pages here and there so it feels like I've been reading forever, so it was nice to finally complete it.
Once back inside, I started on my super easy, super yummy, skinny lemon pie (not vegan)!
Here's what you need:
- 1 scoop of protein powder (I chose vanilla because I thought it'd go well with lemon)
- 2 light cups of yogurt (I chose lemon cream pie)
- 2 boxes of sugarfree jello (Lemon)
- 1 8oz tub of sugarfree cool whip
- 1 graham cracker pie crust
Obviously you can make this pie in any flavor, just coordinate your yogurt, jello and protein powder together to make something that will taste good.
Directions
- Mix all ingredients-except pie crust, in a medium size bowl and stir well.
- Pour into crust.
- Let sit in fridge for 4 hours.

The pie is cool, light and a fun summer treat without overdoing it.
