Veghead

The more veggies I eat, the more I want! I think I'm getting addicted. Good problem to have right? My schedule is so crazy now that I'm teaching 13 classes a week. My workouts (outside of teaching) are going to be all over the place. Today I went to the gym at 10 during my "lunch break" and did 40 minutes of cardio mixed between the bike and elliptical. Whenever I have something to read, I typically stick to these two machines because I'm not moving around all over the place. Reading makes the time fly by.
After that I was starving and had a serious craving for mushrooms and hummus so I stopped by the grocery store near work and got a bunch of veggies. Its a good thing veggies are low calorie because I can put away an entire container of hummus in one sitting, no problem.

On the plate:

  • Red Peppers
  • Green Peppers
  • Cauliflower
  • Mushrooms
  • Celery
  • Carrots
  • Onions
  • and a few black olives
Colorful plate equals lots of nutrients! It's always hard for me to choose which hummus to get because I love them all but I decided on the Roasted Garlic today. If you can tell from the photo, I couldn't even wait to take a picture before I started eating. Delicious!

Here's a fun, boredom fighting cardio workout to complete on the elliptical. Remember- you can always take all of the levels down a notch if it's too difficult or up a notch if it's too easy for ya. Just make sure you take them all up or down so that you still get the changing intervals in order to get optimal fat burning!

  1. I love roasted veggies. Here is an easy way to roast cauliflower. Preheat oven to 450 degrees. On a foil lined pan place 1 or 2 heads of cauliflower that have been cut into bite size florets. Spray with olive oil and spread into a single layer. Roast 20 minutes, stirring once. Top cauliflower with roasted red peppers from a jar that have been cut into bite size pieces. Sprinkle with one fourth cup freshly grated parmesan cheese and roast 5 minutes more until cheese is melted. Eat and enjoy or dip in hummus. if you make 2 heads it stores well in the frigratior for several days just reheat in the microwave and enjoy some more.

    1. I will second how delicious this recipe is! Thanks for sharing. :) I will have to make it and put pictures up. Maybe I'll try it with some vegan Parmesan!
