Moist Peanut Butter Cookies

Today is my turn to bring "Good and Welfare" to the staff meeting at Porters Neck Country Club today. The last couple of weeks people have brought some really yummy looking treats such as cupcakes and cookies. I thought it would be really great to bake my own special treat, vegan style. So last night I whipped up my best creation yet, Vegan Peanut Butter cookies. They turned out better than I could have hoped for.



The best part about these cookies is that they are moist and almost kind of doughy. Speaking of dough- if these were being made for myself, they likely would have never gone in the oven. The dough is THAT good. Here's the recipe:

INGREDIENTS
  • 1/2 CUP APPLE SAUCE
  • 3/4 CUP PEANUT BUTTER
  • 1 TBSP VANILLA
  • 1 1/4 CUP BROWN SUGAR
  • 1 CUP WHOLE WHEAT PASTRY FLOUR
  • 3/4 CUP UNBLEACHED FLOUR
  • 3/4 TSP BAKING SODA
  • 3/4 TSP SALT

DIRECTIONS
  1. Preheat oven to 375.
  2. Mix the apple sauce, peanut butter and vanilla together.
  3. Mix in the brown sugar.
  4. In a separate bowl add soda and salt to the flour.
  5. Gradually add the flour mixture to the creamed ingredients.

6. Drop tablespoon-sized dough balls onto cookie sheet and press down in classic fork pattern.




7. Bake for 10-12 minutes. (I baked mine for 9 to get the moisty-goodness!)
8. Let cool on the pan for a few minutes before transferring to a cooling rack.

Look at me, I'm a hopeless pup in need of peanut butter...

Grady and Muffin love them some peanut butter, those adorable faces sure are hard to say no to!

  1. Peanut M&M's surely meet this discriminating criteria. Tell them fitness pups to just say no!

  2. I'm glad you are choosing the peanut M&Ms because at least they have a tiny bit of protein as compared to the regular kind. The Fitness Pups don't know how to say no to any food, especially their favorite- peanut butter. I did not give them any cookies, however. If I give them things like that they wont be the "Fitness Pups" for long!
