Vegan Banana Bread

Check out what I received this morning...vegan banana bread! YUMMMM! That baby is moist and delicious. My friend Kelly and I have been enjoying making each other treats as it is so nice to have someone to share a common interest with. She has been vegan for two years and even has a son who has an interest in veganism. They enjoy trying new recipes together and I'm happy to be the official taster.



Ingredients
  • 1 ½ cups Flour
  •  2 teaspoons baking powder
  •  ½ teaspoon baking soda
  •   ¼ teaspoon salt
  • 1/3 cup oil
  • ½ cup brown sugar (packed)
  •  1 cup mashed bananas (I use 2 ½ bananas)
  • 1/3 cup soy milk

You could even add some walnuts if you preferred! You can also use 1/2 whole wheat flour and 1/2 unbleached white flour.

    
      Directions
  
1. Preheat the oven to 350. Lightly oil a 9"x5" loaf pan.
2. In a medium-sized mixing bowl, sift together the flour, baking soda, and salt.
3. In a large mixing bowl combine oil and brown sugar.
4. Add the mashed banana and milk and mix well.
5. Add the dry ingredients to the wet- mixing until just combined. DO NOT OVERMIX.
6. If you are using walnuts-this is where you would fold them in.
7. Bake for about 40-45minutes, or until a toothpick inserted into the center emerges clean.
9. Allow the bread to cool on a wire cooling rack for 30 minutes before serving. Store left over bread covered at room temperature.
