For lunch today, I am trying out a recipe for homemade, vegan mayonnaise. Here's what you need:
1 cup canola or safflower oil
1-1 1/2 tsp lemon juice
1/2 cup soy milk
3/4 tsp salt
1/4 tsp mustard (optional)
1. Blend together the oil and soy milk
2. Add in the lemon juice and blend again.
3. Add salt and mustard to desired taste and stir.
I opted out of the mustard this time around. The "mayo" definitely has a good consistency. It doesn't have a whole lot of that mayo taste, probably because it is made without eggs, but it's good. I think it is a good option for individuals who are trying to eat healthier and save money. 82 calories per tbsp.
Now for the "Ham" Sandwich!
I used:
2 slices Ezekiel bread
1tbsp homemade vegan mayo
1 Roma tomato-sliced
1/2 small avocado-sliced
4 slices of Lightlife Smart Deli "baked ham"
1 leaf of romaine lettuce
Pepper
Very delicious! I love the crunch romaine lettuce gives to sandwiches and the mayo was perfect. Lightlife also has a ton of different types of "meats" that are high in protein, low in calorie and taste great!
