A little Thursday humor. :) I can feel the Friday excitement already approaching. Lunch today came in the form of my usual Porter's Neck Country Club salad. Can't beat free and delicious! I'm just scoring on everything today, free Starbucks and salad, not too mention I received some delicious fruit at the staff meeting today. Yay!
Nicoise Salad
Ingredients
- Mixed Greens
- Roasted Red Peppers
- Green Beans
- Black Olives
- Potatoes
- Lemon Vinaigrette
The potatoes make this salad- it always comes with two slices which is just enough to get the taste without overdoing the starchy carbohydrates. Salads are another great and healthy option for cool, refreshing summer foods.
I'm off to the gym to get some cardio in and work on a new book "Eat to Live" by Joel Fuhrman. I'm about 40 pages in and it's already really great. I got to work early today so I could break up my long day with a little workout. Then I'm coming back to teach a TRX class and hopefully hit up Trader Joes on my way home this evening. What is your favorite cold food to eat during the summertime?
It is an established fact that certain family members would say ice cream and enjoy it every night summer, spring, winter or fall. I would choose ice cold watermelon. A coworker told me she cut one in half and froze it. Then she cut it in pieces and threw it in the blender. She said it was the best slushy she ever had and only one ingredient. I can't wait to try it.
