Red, White and Blueberries!

Hello and happy Tuesday!

Who else is making plans for the Fourth of July next week? I have decided to take the day off to spend with Michael. He's flying into Myrtle Beach at 10:30 and then we are planning to walk downtown to watch the fireworks, eat and enjoy the festivities. 

Originally I was planning to go boating with my friend Kendrick before I knew Michael was coming. Of course, I immediately checked out Pinterest for some fun, healthy Independence themed snacks. Here are some of my favorites:

Angel Food Red, White and Blue Cake



 or Red, White and Blue Cake Kabobs


Ingredients:
  • Angel Food Cake, chopped into small squares
  • Blueberries
  • Strawberries or Raspberries
  • Either kabob sticks or a large rectangular pan/dish
Directions:
Chop everything and serve chilled!

Independence Day Parfaits


Ingredients:
  • Blueberries
  • Strawberries or Raspberries (or both!)
  • Nonfat Vanilla Greek Yogurt
Directions:
Layer everything in a see-through glass and served chilled.


Homemade Sangria


Ingredients:
  • One regular bottle of sweet, white wine
  • 1/3 container of fruit juice concentrate (Like berry, cherry etc)
  • 3oz each blueberries and raspberries
  • 1/2 pint strawberries, chopped
Directions:
Pour wine into a large pitcher. Add fruit concentrate and stir. Combine all berries in a bowl, slightly mush until a small amount of juice is released and pour into the pitcher. Serve cold.

Patriotic Chips and Salsa

Ingredients:
  • 1 cup blueberries
  • 1 cup each strawberries and jicama, diced
  • 1/3 cupped chopped cilantro
  • 1/4 cup finely chopped white or red onion
  • Juice of 1 large lemon and 1 large lime
  • Sea salt to taste
  • Plus tortilla chips or pita chips to dip!
Directions:
Chop fruits and veggies, squeeze juice of lemon and lime into bowl and add salt to taste! Serve cold with chips.
