I thought I'd share my dinner last night since I don't often share my evening meals with you all unless I'm out to eat somewhere fun. This is a typical evening meal for me. I'm always starving and exhausted by the time I get home so I rarely ever cook for dinner.
On the plate:
- 100 calorie bread
- Lettuce, onion and mustard on a veggie burger.
- Premade tabouli/quinoa mix with tomatoes. I added chopped mushrooms because I had some in the fridge to use up!

Eventually, I will start making my own veggie burgers but, I'm still living a bit like a college kid for now! My dad and brother are coming to visit in November and my mom already reminded me to make a Costco list for when Daddy gets here!
Plans for Today:
- Staff meeting at 1
- Meeting with an employee at 2
- Teaching TRX class at 4
- The League Juniors Program at 5:15
Then something fun to get my blood pumpin'! I haven't worked out yet today because I went grocery shopping last night so I ended up spending the morning separating my produce and other food into serving size portions. This has been a huge help to me as of late to keep my calories in check, especially when I'm in a hurry!
