Chocolate Chip Pumpkin Pie Protein Cookies

These are super clean, flourless, eggless, tasty vegan cookies and a perfect start to Fall! I'm sure there will be many more pumpkin recipes to come so if you are a pumpkin person like me, stay tuned.

Vegan Chocolate Chip Pumpkin Pie Protein Cookies


Ingredients
  • 1 Cup almond butter
  • 1/2 Cup canned pumpkin
  • 1/4 Cup sugarfree maple syrup
  • 2 teaspoons pumpkin pie spice
  • 1/2 scoop vanilla protein powder
  • 1/4 teaspoon sea salt
  • 1/2 cup vegan chocolate chips



Directions
  1. Preheat oven to 350 degrees
  2. Combine all ingredients except chocolate chips and mix well.
  3. Fold in chocolate chips.
  4. Drop batter tablespon sized onto lined baking sheet and gently press each with a wet fork to flatten.
  5. Bake 14-16 minutes until edges start to golden.
  6. Allow to cool directly on baking sheet. 
These cookies represent a pumpkin pie type texture so they will keep a soft/moist form. For firm cookies chill in refrigerator before serving or freeze to enjoy over the next few weeks!
