Vegan Chocolate Chip Pumpkin Pie Protein Cookies
Ingredients
- 1 Cup almond butter
- 1/2 Cup canned pumpkin
- 1/4 Cup sugarfree maple syrup
- 2 teaspoons pumpkin pie spice
- 1/2 scoop vanilla protein powder
- 1/4 teaspoon sea salt
- 1/2 cup vegan chocolate chips
Directions
- Preheat oven to 350 degrees
- Combine all ingredients except chocolate chips and mix well.
- Fold in chocolate chips.
- Drop batter tablespon sized onto lined baking sheet and gently press each with a wet fork to flatten.
- Bake 14-16 minutes until edges start to golden.
- Allow to cool directly on baking sheet.
These cookies represent a pumpkin pie type texture so they will keep a soft/moist form. For firm cookies chill in refrigerator before serving or freeze to enjoy over the next few weeks!
