Lower Calorie Peanut Butter Cookies

This morning when my alarm went off at 5:45 I was not feelin' it. This constant weather change is making my allergies go nutso on me and I woke up with some puffy eyes and a huge lack of energy. I knew exactly what I needed for breakfast!

Tea + Fruit = Game changer! 

By the time I get back for my afternoon post I'm going to be feeling like a whole new person. Bring on the antioxidants, vitamins and minerals. I also brought some carrots and hummus with me to munch on later AND peanut butter cookies for Miss Kelly. 

Yesterday I got bored and decided to do some experimenting with the moist peanut butter cookies I made a few weeks ago. Now, if you've ever made peanut butter cookies, you know that its not the peanut butter that makes the unique "peanut butter cookie taste." It's the brown sugar. The brown sugar is also responsible for the moist amazingness. However, I was on a mission to make a lower calorie cookie today with maybe not a comparable taste, but one that would satisfy my sweet tooth without overdoing it. The main calorie sources in these cookies come from the flour, peanut butter and brown sugar. 

Obviously you can't substitute the flour in this recipe so I decided to sub out the brown sugar for Truvia- all natural, low calorie sweetener. Because Truvia is a lot sweeter than brown sugar, you use a lot less. The original recipe calls for 1 1/4 cups of brown sugar which is equivalent to 1/2 cup plus 2 tablespoons of Truvia.


The cookies aren't nearly as moist but they are still soft and have a pretty good taste. I would definitely make them again. Of course the brown sugar ones are better, but these are great if you are trying to make a healthier version.

What do you consume/do when you are low on energy?

Working out always makes me feel better, and then there's always caffeine. But fruit and veggies have very seriously changed my life as far as energy goes!
