It's Monday! I'm excited to start a very short work week. I'm in today until 5, have my normal Tuesday off, work a full day Wednesday and then I am on vacation until next Wednesday! Zachary will be here Thursday and although I have a million things to do before then, it can't get here any faster!!
Brooke, myself and Mandy
Yesterday, despite a rainy start, the Color Me Rad 5k was lots of fun. I met up with Brooke and Mandy around 8am and we rode the trolley over to UNCW's campus to the start line. People were throwing color packets around before the race even started! Everyone had some sort of white on and by the time the race was over, we were all very colorful! There are three stations in which powdered color are thrown on you, one at each mile and one station where some liquid green is squirted on you. I wasn't a huge fan of the liquid color as it was already a little cold out and being wet didn't make things any better.
It was rather eventful for a couple reasons. Mandy didn't have any old shoes to wear so she put grocery bags over her shoes. She got a lot of funny looks which we got a huge kick out of. Within about a half a mile, the bags weren't working and she ended up walking in her socks. To follow up, I stuck my phone in my sports bra and about a mile later, forgot it was there. Freaking out, thinking I lost my phone, I ran all the way back to the last water station and asked to borrow a volunteers phone. When it started ringing from my chest it was quite embarrassing. All in all the 5k was quite eventful for such a short race! I still have a little bit of stubborn green on my forehead but other than that, a shower seemed to do the trick! As for my clothes, I don't think that color is coming out anytime soon!
I was ready for food after the 3 mile walk and made myself a big bowl of spaghetti squash and ate that throughout the day. One cup of spaghetti squash is just 30 calories! I added some organic tomato basil dressing and a side of bread with a little earth balance butter. It was perfect post-race fuel! (If only we had run the race!) Spaghetti squash is one of my favorite dishes to make when I'm really hungry but watching my calories. I can get full on very few calories and still get lots of veggie nutrients! It's a great pasta replacement and tastes great with sauce, dressing or simply olive oil, salt and pepper.
Today
Lots of fun office work today, hopefully getting through some continuing education stuff, writing some workouts and prepping for my week off. After teaching TRX class at 4, I have big plans for a workout this evening and then getting started on cleaning my apartment! That'll keep me busy for a while!
