Vegan Applesauce Oatmeal Cookies

Normally I like to work out on an empty stomach but this morning I was super hungry! I pulled out my handy dandy magic bullet and whipped up a protein shake with my usual ingredients. Nothing beats the peanut butter and banana combo.

In the mix:
  • 1 scoop protein powder
  • 1 tbsp chia seed
  • 2 tbsp pb2
  • 1 tbsp coarsely ground flaxseed
  • 1/2 frozen banana
  • Lots of ice and a little water to get things movin'!


To round off the meal I pulled two of the Vegan Applesauce Oatmeal Cookies my mama sent me about a week ago, from the freezer and warmed them up. Dipping them in my shake was like dessert for breakfast, yummers!



These cookies are made with super clean ingredients and have a very healthy taste.  I love them because I can eat them as a snack or with a meal and feel like I'm getting a treat. However, they are only 49 calories! Plus, you can freeze them so that you don't eat them all in one day. :)

Vegan Applesauce Oatmeal Cookies

Ingredients
3C quick cooking oats
1C whole wheat pastry flour
1/4t ground nutmeg
1C sugar (or substitute)
1t baking soda
1C unsweetened applesauce
1t vanilla extract
2/3c dark raisins (optional)

Directions
  1. Preheat oven to 275 degrees.
  2. Combine oats, flour baking soda and nutmeg. Stir well.
  3. Add applesauce, sugar and vanilla. Stir well. 
  4. Stir in raisins if desired. 
  5. Coat cookie sheet with cooking spray or line pans with parchment paper.
  6. Roll the dough into 1" balls and place on cookie sheets.
  7. Flatten dough to 1/4'' thickness. (If dough is too sticky to handle, place in the freezer for a few minutes before rolling).
  8. Bake for 22 min or until lightly browned.
  9. Transfer cookies to wire racks and cool. 
  10. Enjoy and/or transfer to an airtight container.
